The cookbook I suggested in a different thread is ideal, she offers some cute alternatives to sandwiches...the olive penguins are fun, and using a cookie cutter on sliced veggies is a hit for my kids.

Also, If you have a trader joes in your city- there are tons of choices there too-
Here are some of our lunch choices
Plantain chips gluten free granola gluten free pretzels with peanut butter gf cereal bars-like rice krispie treats gluten free ginger snaps turkey roll ups fruit leather gluten free pasta salad tortilla chips with black bean spread as dip Dr. Praegers spinach bites Gluten free chicken nuggets freeze dried fruit and veggies nut butters on gluten free waffles or pancakes
Also, my own blog talks a lot about raising gluten free kids- so if you find yourself overwhelmed at first, know that like any dietary change it all about knowledge and reading labels.
