My boys are pretty decent eaters, but eat very little veggies. 2 Jax and Jag will eat corn, green beans, lettuce, and at least try other things. But Jordan who has been my perciular eater from the beginning refuses to even try them. Other than shoving it down his mouth, how do I get him to eat them? (Thats a joke)

Afraid they are not getting their proper nutrients.

I have the same problem with one of my girls. Wish I had some good advice for you. I've just been giving them V8 VFusion for their juice. It's supposed to be equivalent to a serving of fruits and vegatables so I feel a little better that they're getting some of what they need.

It is all about trickery for my picky eater. My other 3 boys will eat anything. Bryce says "I don't like it" to everything on his plate.
I'm lucky he likes chili (tomatoes) and spagetti (tomatoes again). Tonight I made vegetable soup, which he immediatly turned his nose up to. I just said "Oh Brycie, those aren't the regular green beans and corn we eat. Those are special and different. This is "veggie tales" soup." He bought it and ate the whole bowl. Of course, I had to loud it down with crackers.
I also let him dip lots in ranch dressing, green beans especially.
I chop everything up very tiny so he can't see what he's eating.
Good luck. I'm always looking for ideas to get this child to eat.

What I do is offer a plate of chopped up raw veggies and tiny dipping cups of Ranch on the table while I am making dinner. They refuse veggies cooked but will eat almost anything raw with Ranch. I learned that from Jessica Seinfelds book. Now I can give them raw veggies anytime and they will eat them but it started with pre-dinner appetizers.

I hide veggies when possible. My kids are very hit or miss with eating them. I still serve veggies even if they don't eat them. However, I have used the Sneaky Chef and Jessica Seinfeld books for ideas on how to hide veggies. I don't make a lot of their recipes, but do use the books as a resource. I've made a couple of purees from the Sneaky Chef book and froze them. I also keep baby food carrots and sweet potatoes on hand. When I'm making a recipe I think about what kind of veggies I can throw in. Meatloaf is great for this because I can throw in a lot of stuff and they have no idea. They aren't getting a ton of veggies this way but every little bit counts.

One veggie they consistantly eat is sweet potato fries. I just buy the frozen ones and bake them. It probably wouldn't be hard to make them from scratch but I am lazy. I would like to try the raw veggie idea but am afraid of choking. We'll probably wait a bit for that one.

You have to read Jessica Seinfields cookbook. It has some really good ideas for picky eaters. I hide carrots in any spagetti sauce I make, I also made meatballs with broccoli puree in them. The kids have no Idea this stuff is good for them . Another good idea is hiding califlower puree in deviled eggs or mashed potatoes. Sweet potato fries are an easy side to any dinner as well. HTH.(My girls will often tell me they dont like the veggies I am buying, and they have no idea they are eating them every night)

maybe too late for this year, but how about a garden and let them grow their own? mine love to eat what's in their garden! we have 3 little garden plots, all separated out.

for lunch, we often do 'snack cups'. the old Gerber pureed veggies in a plastic cup. I open it up and give them a spoon! They get the choice of green, orange or yellow. I don't think they know they're eating vegetables! (I've never told them)

otherwise, don't know. my kids eat most things, veggies included, but if they've decided they don't like something (my boys don't like potatoes!), it's very hard to get them to eat it.

I did read somewhere though that fruit has very similar (or same?) vitamins as veggies, so maybe that could be a option? we give fruit for dessert each night.
