#272, "Favorite Christmas Recipes"


          

I remember some people saying their favorite Christmas treat was eggnog. What is your recipe? How about cookies? What are your kids' favorite cookies? Please share your best for this time of year.

Here's the eggnog I've been making. Warning, this is NOT for large-scale consumption. We make it without the liquor and add rum to individual servings as requested. The original recipe is from Allrecipes.com, and it is really thick - like store-bought - only without the carageean or what ever it is they use to make that stuff thick.

4 cups milk (any kind – whole 2%, 1%, or skim)
3 whole cloves (or 1/8 teaspoon ground cloves)
½ teaspoon vanilla extract
½ teaspoon ground cinnamon (could use 2 sticks cinnamon)
12 egg yolks (can cut this back too to 10 , or 8, or 6)
1 ½ cups granulated sugar (can reduce to 1 cup total)
2 cups light rum (to taste, really)
4 cups light cream or half and half
2 teaspoons vanilla extract
½ teaspoon ground nutmeg, plus more for serving

1.Mix milk, cloves, ½ teaspoon vanilla and cinnamon in large saucepan and heat over low setting until hot and just starting to simmer.
2.In a large non-plastic bowl, whisk yolks and sugar together til light and fluffy. Whisk hot milk SLOWLY into yolk mixture. Put it all back into the saucepan over medium heat for three minutes and allow to thicken. Do NOT allow it to boil. Strain to remove spice pieces and let the mixture cool for an hour.
3.Stir in rum, cream, 2 teaspoons vanilla and nutmeg. Refrigerate overnight before serving. Sprinkle a tiny shake of nutmeg on each serving.
